look it up on the net, there are mant diffrent thing to read on it,, have fun,
i have my meat cutting certificate in 1991 did my four years to get it, and i took a sausage course in vancouver at school, that is now nomore there, i have a small shop at home and do lots of game cutting for friends,, lots of work, good luck,

Most sporting goods stores have DVD's on how to process game. I know Walmart has them too. You can find a lot of info on the web about making sausage.

i think he went to vvi which is no longer my uncle went through the course, my uncle doesn't cut meat no more he gave me all his stuff butcher block band saw, sausge stuffers, knifes, sharpeners the works, i built a good cooler that could fit up to 10 deer, i don't want to cut others animals but im going to cut my own for now on i bought some stuff from these guys can't wait to cut some bear http://www.askthemeatman.com/meat_cutting_videos.htm
